Keto Chocolate Cups

Hey guys - so I got a ton of questions on Keto, what it is and why I’m doing it! Firstly, I love how much you guys look out for me! Anyhoo I’m currently on Day 10 of my Keto journey, and I plan on doing this only for a month before I take off on vacation :)

I’ll certainly blog about it and try to answer all your questions, but honestly there’s a ton on Keto online. My biggest challenge has been meal prep! Those of you who knonw me personally, I'm a carb addict! There's not a single meal in my entire life that has gone by without carbs in it! That being said, on Keto now I'm trying to keep my carb intake under 25gms a day ... honestly, it’s been alright!

Why I'm doing this - well to shed a few pounds sure. But I'm not really trying to lose any weight at all, I just wanted to try it coz I heard great things about it and witnessed 2 friends shed 10s of pounds in a handful of months, and healthily. So I decided I'll try it out, in the worst case I'll fall out of it! But its been amazing so far.

You're really trying to condition your body out of depending on carbs for energy and start burning fat to sustain. This is a process and takes strict discipline, but after you're over the chasm, you enter what we call "ketosis" which is where your body is not a non stop fat burning machine.

I don't know how deep in I am, but I use the urine strips to test myself every morning and its safe to say it took me 10 days to have Morderate levels of ketones and I am now in "ketosis". What does this mean - no carbs! gluten free, dairy free, vegan means? Mostly yes. But that's incredibly restrictive... and while I'm okay with sticking to proteins for most meals, I still need to satisfy my sweet tooth!!So now I’m discovering newer and healthier ways of cooking the same dishes I normally eat, except now I’m making them carb free, dairy free, gluten free and vegan! That also means non more starbucks lattes for me but instead I'm making homemade lattes with unsweetened almond milk! If you really get into it seriously, you'll realize there are TONNNNS of food options that are yummy that you can make or order outside and I’ll be happy to blog al about it! One of my FAVS so far, and really a life saver, has been the Keto Chocolate Cups!

I read a few odd chocolate recipes online and eventually put this together and I AM ADDICTED!!! They probably run about 100 calories a piece with <1gm of net carbs! Isn't that INSANE! Even when I get off keto I'm gonna continue making these at home! So for the recipe - easy peasy!

Time:

Took me 5 mins to order on instacart, 10 mins to whip up the chocolates, 30 mins in the refrigerator and DONE!

You'll need:

Almond butter - 3/4-1 cup

Coconut oil (melted) - 3/4-1 cup

Coconut flour - 1/3 cup

Unsweetened cocoa - 1/2 cup

Stevia - 1 tsp

Crystal salt - 1 pinch

Prepare:

Mix the almond butter and coconut oil (melted) so it is a blended paste. Now mix rest of the ingredients in slowly till there are no lumps and creates a uniform chocolate paste.Pour this mixture into empty cupcake size baking cups.Freeze for 30 mins. AND YOU're DONE! I keep this constant supply of mini chocolate butter cups in my fridge, and take a bite every time I pass by the kitchen! Its so addictive and SO healthy!

Its an acquired taste so stay with it, but once you get hooked, you're not getting off! I tend to have about 1/3rd a cup a time so I stay under 100 calories a bit haha Hope you found this helpful!!
