Mini Oatmeal Cookies

Its the holiday season and I’m constantly craving something to soothe my sweet tooth!

While a lot of my cooking is usually healthy, I love indulging every now and then in a decadent chocolate mousse or a Ferrero Rocher (or 3) haha. Well in the spirit of exploring something healthy and delicious, here’s a super easy cookie recipe that both my hubby and I loved!

INGREDIENTS

1 egg
2 tbsp creamy Peanut Butter
1/8th cup melted unsalted butter
1 tbsp vanilla extract
7 Stevia satchels or 1/2 cup of fine sugar
1 tbsp baking soda
1/2cup rolled oats
1/4 cup coconut flour
1/4 cup semi sweet chocolate chips

DIRECTIONS

Blend the Egg, Butter, Vanilla extract and sugar/stevia in the blender for 30 secs.
In a bowl, mix Oats, coconut flour, chocolate chips and baking soda.
Slowly add the wet mix from the blender into the bowl.
Roll into small balls and then flatten them out into mini-cookies.
Place them on a lightly greased baking pan.

Pre heat oven to 350 degrees.
Place the baking pan with the cookies in the oven for 15 mins.
Take out of the oven and let the cookies cool and serve!
