Oatmeal Banana Pancakes

So you guys know I’m either having an acai bowl or avocado toast for my weekend breakfasts and they’re both huge hits. But for a change, my hubby suggested pancakes and I usually don’t eat pancakes because of how rich and heavy they are.

So, I tried a “lighter” version of pancakes. I looked up a ton for recipes and here’s what I eventually tried. Word of caution – do not add the oats and bananas to the blender until later. Also gradually add the oats so you do not end up making the batter too thick or dry… because you can’t add liquid later to the mix – it won’t work!

INGREDIENTS

2 cups Almond Milk
1 Egg
1.5 tsp Baking powder
0.5 tsp Baking soda
0.5 tsp salt
2 tsp Honey
2 Ripe Bananas
1 cup Coconut flour
1 cup Rolled Oats
2 tbsp Peanut Butter (optional)
2 tsp Semi-sweet Chocolate chips (optional)

DIRECTIONS

Add everything to the blender (in the same order) except the Oats.
Start blending at low till everything is mixed.
Add the oats and optional ingredients.
Blend on med-high for about 45 secs

Get a pan ready and heated lightly greased with butter
Scoop a spoon of batter and pour 4 inch circles on the pan
Flip when the base is browned
Flip again and take it off the pan!

Serve with honey or maple syrup, pomegranate seeds, blueberries and slices almonds!
