Cucumber Noodle Zoodles
I’m a huge carb lover (who isnt?) and I cannot imagine replacing my linguine pesto pasta on date nights with anything else in the world! That said, I’d have to wait till the weekends for that pasta.. but with the Zoodles wave I’ve found a fantastic replacement for it!
I do need to clarify though, I HATE ZUCCHINI ! I find it slimy and tasteless. Instead I tried making zoodles with cucumber – and I hit the jackpot! I’m almost surprised why/how zucchini noodles are so popular and not cucumber noodles! Anyhoo, I swear by cucumber noodles – raw or cooked, coz they’re crunchy and easily grab on to the seasoning added to them! So here you go…
INGREDIENTS
2 whole cucumbers
Salt & Pepper
2 Red chillis
2 tbsp Olive Oil
2tbsp Sesame Seeds toasted
1/4th cup shredded cheese (optional)
DIRECTIONS
Spiralize the 2 cucumbers using a standard spiralizer (I recommend the broader blades rather than angel hair blades)
Salt the zoodles and place then in a strainer
Wrap in clean paper towels to absorb the water released by the cucumbers
Let it sit for 15 mins
Heat some Olive oil in a pan and add red chilis till you heard them crackle
Add the zoodles to the pan
Add cheese and mix
Add Salt, pepper and toasted sesame seeds
Stir fry the zoodles for 5 mins
Serve hot!
Garnish with toasted almonds, sesame seeds and shredded cheese
