Tortilla Taco Soup

Its the middle of January and I’m still exploring introducing more soups into our diet! With my recent health issues, I’ve not been able to workout as it aggravates the symptoms! So, weight gain! The only thing I am in control of is really what I put in my body – and I’ve been trying to work out a fully plant based Tortilla soup recipe. Here’s my best bet:

INGREDIENTS

3 cups Vegetable Broth
1 Onion chopped (preferably roasted)
1 tbsp diced Tomato
1 tbsp Garlic paste
2 cups Bell Peppers (preferably roasted)
1 Jalapeno
1 cup baby carrots
1/2 tsp cumin powder
1 tsp Taco Seasoning
1 tbsp Butter
1 handful Cilantro
Salt & Pepper to taste

DIRECTIONS

Roasting Onions & Bell Peppers (optional):
Sautee onions & peppers on stove top for 5-7 mins

In the blender container, add ALL the above ingredients.
Blend on High (10) for 7 mins.
Serve hot
Garnish with cut Jalapeno, Cilantro & Lime
