Healthy Pie Crust Pastry for Beginners

I'm back to blogging after a LONGGGG time! Lately, i've turned my DIY passions to baking - turns out it's incredibly fun and really gets my creative juices flowing. This is my very first attempt at making pastry, and I'm excited to try it out with a healthy twist. I decided to halve the traditional pie-crust recipe to make a single crust layer for the top of a pot pie. The plan is to pair this crust with a filling of spiced chicken and veggies, inspired by Indian flavors, for a cozy, comforting chicken pot pie. By using only one layer on top, Iā€™m keeping things lighter while still getting that satisfying, flaky pastry finish. And, it turned out AMAZING! My husband and I inhaled the whole pie in 1 sitting.
