Basil Pesto & Cucumber Zoodles
5 min recipe to make homemade Fresh Basil Pesto ! Add it to pasta, zoodles, salmon or chicken!
My hubby and I are fans of the classic pesto linguine pasta. We binge on it every Italian restaurant we go to, but we’ve often been disappointed in the pesto being too dry, too dull in flavor. There are only a handful of places we know that makes it really well. Eventually I thought what if I tried making it the way we love – a little spicy, a little lemony and a little creamy!
INGREDIENTS
2/3 cup Olive Oil
1 whole Lemon squeezed
1/4 cup Cashews + Almonds
1/4 cup Pine Nuts
2 cups Basil
1 cup Kale
2 tbsp minced Garlic
1/4 cup shredded cheese (Parmesan or Mozerella)
Salt & Pepper to taste
CUCUMBER ZOODLES
4 cucumbers – spiralized
DIRECTIONS
Toast the pine nuts & cashews + Almonds for 5 mins
Add everything to the blender
Scoop every little bit and use it with Zoodles, Fish, Chicken or regular pasta!
For ZOODLES:
Spiralized the cucumbers
Put them in a strainer and add salt. Let it sit & drain water for 20 mins
Then wrap this in paper towels or a clean dish towel to absorb more water. Replace the paper towels couple times
You can cook the zoodles too and add pesto!
